I love pancakes. They're amazing because you can do so much with them; flavours, ingredients, toppings...
Recently we bought a big bag of carrots... What do you even do with carrots?! The only time I eat carrots are with roast dinners. Honest. So I needed to use them up. CARROT CAKE = "BINGO!"
After a week at Glastonbury festival; a diet of burgers and cider I'm cutting carbs for a few days in the hopes to loose my Glasto muffin top. I needed to make pancakes that were low carb, high fat and contained carrots.
And they turned out pretty awesome.
INGREDIENTS:
(Serves 1)
PANCAKES
- 1/4 cup almond flour
- 1 scoop of protein powder (preferably vanilla or plain)
- 1/2 tbs chia seeds
- 2 whole eggs
- 2 1/2 tbs milk (almond, hemp, oat, cows)
- 1/2 tsp baking powder
- a few dashes of cinnamon, nutmeg, ginger
- 1 large carrot grated
- 2 drops of vanilla (add a whole tsp if using plain protein powder)
TOPPING
- raisins
- walnuts
- coyo
- garnish with grated carrot
Whisk all pancake ingredients into a jug and stir in the grated carrot. Pre-heat oil in a pan. Fry batter until mixture is completely cooked and pancakes turn slightly brown. Spread coyo evenly on top layer pancake or on each to layer and sprinkle raisins, crushed walnuts and grated carrot on top.
