INGREDIENTS
PISTACHIO AVOCADO ICE CREAM
- 1 frozen avocado
- 2 tbsp coconut cream
- 1-2 tbsp coconut milk
- 1 heaped tsp stevia
- 1/2 tsp vanilla powder
- 1/2 scoop vanilla protein (opt.)
- 1 heaped tbsp unshelled pistachios
FOR THE SMOOTHIE
- 1 cup almond milk (or milk of choice)
- 1 frozen banana
- 1 handful of spinach
- 1 handful of kale leaves
- 1/2 tsp spirulina
- 1 tbsp cashew butter
- 1/2 tbsp maple syrup
- 1/2 tsp vanilla powder
- 1 scoop vanilla protein (opt.)
- Chopped pistachios and cacao nibs for decorating
METHOD
First blend the avocado and coconut cream in a food processor adding the milk 1 tbsp at a time till reaching a creamy yet still frozen texture. Add the rest of the ingredients one at a time pulsing after each new addition. You may need to keep scraping the mix down the sides of the mixer during the process. If needed add extra milk. Once fully blended using a spatula transfer the mixture to a bowl and put in the freezer.
Next blend all the smoothie ingredients. Pour into a glass and top with the ice cream. Sprinkle chopped pistachios and cacao nibs to decorate.
