Soft banana flapjacks



This recipe is Deliciously Ella's banana flapjacks with a couple extra additions and changes. They are super duper, easy peasy to make - an all-in-one bowl type of recipe - I don't know about you but every time I cook I end up using 5 different teaspoons, 2 different tablespoons, a bunch of cups and several bowls - at the end you think, how did that even happen it was a 3 ingredient recipe?!  I only used one tablespoon for this recipe, yes that does mean I double dunked that spoon in the peanut butter covered in honey...and coconut oil...FYI those 3 together on a spoon tastes great... gotta pre-clean the dishes somehow right? 

Ingredients

  • 3 1/2 large ripe bananas  or 4 medium
  • 3 tbsp of honey/maple/agave
  • 5 tbsp of peanut butter
  • 2 tsp of vanilla extract
  • 1 tsp of almond extract
  • 3 tbsp of room temperature/soft coconut oil
  • 300g of oats
  • 1 scoop of vanilla protein
  • 1 bar of dark chocolate, melted

Method

Preheat oven to 180'C. Mash the bananas using a fork in a large bowl. Add in the honey, peanut butter, vanilla, almond extract and coconut oil and mix, Place the filled bowl onto a set of scales and weigh out 300g of oats along with 1 scoop of protein powder. Blend using a spatula until all the oats are covered in the previous sauce. (I used vanilla protein but this can be subbed with a chocolate.) Pour mixture into a greased tray and bake for 30-40 minutes. Once baked melt the dark chocolate for 1 minute or longer if needed in a microwave. Spread the melted chocolate evenly on top of flapjack and freeze for 15-20 minutes. Remove from freezer and cut into desired sizes, pour a cuppa and enjoy :)
