Carrot cake protein bar

Nothing beats a classic bit of carrot cake, it's like a lemon drizzle -it's not a go to cake but it's that cake that always satisfies. You know, a crowd pleaser?

But we all know cake isn't the best for abs. So here is another yummy protein bar recipe that will make you forget about cake!



CARROT CAKE PROTEIN BARS

(Yields 6-8 bars depending on you size preference)
INGREDIENTS

  • 2 cups of oats (for GF use GF oats)
  • 1/2 cup of coconut flour
  • 80g agave
  • 1/2 cup of cashew butter
  • 1/2 cup of milk (coconut/almond/cow's)
  • 4 scoops of vanilla
  • 90g carrots, shredded
  • 60g raisins
  • 60g walnuts
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • pinch of nutmeg
TOPPINGS
  • 120g coyo (plain/vanilla)
  • 20g toasted coconut
METHOD

Blend 2 cups of oats in a food processor till a fine flour is formed. Add to a large bowl along with the coconut flour, 4 scoops of vanilla whey and spices. In another medium-sized bowl add the cashew butter and agave and melt in the microwave for a minute. Stir the syrup mixture then add to the flour bowl and fold through. Then add the milk 1-2 tbsp at a time till a doughey  consistency is reached. 

Blitz the carrots into your food processor and add to the dough along with the raisins and walnuts. Knead the mixture till the add ins are evenly spread.

Line a brownie tray with parchment paper and lightly grease. Put the mixture in the tray and spread evenly with a spatula. Freeze for 15- 20 minutes and top with coyo and toasted coconut (opt.)
