As promised, another protein bar recipe. I know they're all a bit fruity at the moment but I can assure you there is plenty more to come... and probably too much chocolate...
CHERRY BAKEWELL PROTEIN BARS
(Yields 6-8 bars depending on you size preference)
INGREDIENTS
- 2 cups of oats
- 1/2 cup of coconut flour
- 80g cup of agave, melted
- 1/2 cup of cashew butter, melted
- 4 scoops of vanilla protein powder
- 1 tsp of almond essence
- 1/2 cup and 2 tbsp of milk (coconut/almond/cow's)
- 70g dried cherries
TOPPING
- 5 tsp of stevia icing
- 5 tsp of vanilla protein powder
- 55g flaked almonds
- Fresh cherries to top opt.
METHOD
Blend the oats in a food processor till a fine flour is formed then in a large bowl mix the oats with coconut flour and protein powder. In a separate medium-sized bowl pour in the nut butter and syrup and melt in the microwave for a minute. Stir and add in the almond essence. Pour the syrup mixture into the flour mixture and fold through. Add the milk 1 tbsp at a time using more or less if necessary till a dough like consistency is formed. Knead the dried cherries into the mixture till evenly spread.
Line a brownie tray with parchment paper and lightly grease. Transfer the dough mixture to the tray and spread evenly with a spatula. In another small bowl mix the icing sugar and protein powder together adding a couple tsp of hot water. Top bar mixture with icing and flaked almonds. Freeze for 15-20 minutes.
If you want to make it look more add a fresh cherry on top and voila!
***If you want to make this gluten free use gluten free oats ;)
