Strawberries and cream protein bars

Recently I've been working on tons of amazing protein bar recipes for you. It all started a couple weeks ago where I tried to make some protein bars. The end result was awesome. The recipe I put together was super quick (isn't it the worst when you make a recipe only to realise that you have to let it set for AT LEAST 4 hours!?!?!), CHEAP and easy to make but better yet it was so versatile. After making one batch I couldn't stop coming up with other flavours - whilst at work, whilst training, during conversations with people (yes, I'm sorry I probably wasn't listening to you), whilst watching films, in bed and on the loo! In the end I came up with so many that it occurred to me I probably have a books worth of flavours here - in fact why don't I make a book?! 


Luckily for you I will be posting some of the best on here for free and eventually putting those, and even more into a fancy ebook which can you can get for yourself, gift to a friend or maybe your a personal trainer and this could really help your clients.

So here it is, the first recipe:


STRAWBERRIES AND CREAM

(Yields 6-8 bars depending on you size preference)
INGREDIENTS
2 cups of oats (for gluten free use GF oats)
1/2 cup of coconut flour
4 scoops of vanilla whey
1/2 cup of cashew butter, melted
40g of agave, melted
1/4 cup of low sugar strawberry jam
40g white chocolate chips
50g of freeze dried strawberries
1/2 cup of milk + 2-3 TBSP extra
Opt. low fat squirty cream.

METHOD
Put the two cups of oat flour in food processor and blend until the oats are grounded into a fine flour. Then in a large mixing bowl stir the oat flour, coconut flour and protein powder together till combined.

In a separate medium sized bowl add the agave (you can sub this for honey or maple syrup), cashew butter and jam and microwave for 30 seconds to 1 minute till melted. Whisk with a fork and add to the flours.  Mix together and while slowly adding the milk. Add milk 2 TBSP at a time till reaching a doughey consistency which isn't too dry that it doesn't stick together nor too wet that it's more a batter.  Finally add the chocolate chips and strawberries then knead and fold the dough till they are mixed in evenly.

Line a brownie tray with parchment paper and lightly grease with coconut oil. Spread the dough out into the tray and smooth down with a spatula. Freeze for 15-20 minutes uncovered. Slice into evenly shaped bars (around 6-8 depending on the size you want).
