Today I was left with a bunch of bananas going brown and skins splitting open. I had to use them up. The usual options ran through my head: cake, bread... I always make that..., pie, cookies...yes, cookies, banana bread cookies? Yes! So there it is, how I came up with these soft and chewy banana bread cookies today. No amazing back story, nor an exciting adventure just potentially wasted ingredients. Oh, and to help you along whilst you wait for these to bake -I have attached the banana song sung by the Minions which totally makes these cookies even more exciting :P
Ingredients
- 1 cup of oats (blitzed into oat flour)
- 3/4 cup of spelt flour (for GF sub with gluten free flour)
- 1 heaped tsp of baking powder
- 1 scoop of protein powder (vanilla recommended)
- 1 tsp cinnamon
- pinch of nutmeg
- 2 Tbsp of melted coconut oil
- 1/2 cup of mashed banana
- 1 tsp of vanilla
- 1/2 cup of honey/agave/maple syrup
- 50g of dark chocolate chips (you can add more)
- Opt. extras nuts (walnuts/pecans) and raisins.
Method
Mix all the dry ingredients together in a large bowl - from oats to nutmeg. In a separate bowl mix all the wet ingredients and add to the dry ingredients. Stir through the dark chocolate chips and any extras. Drop spoonfuls of dough onto a baking tray lined with baking sheet and flatten into desired shapes. Bake at 175'C for 10-15 minutes.
