Protein cereal biscuits

Yes, another cereal post - but who hates cereal?! Bet you didn't think it was even possible to make healthy cereal! As a teenager I used to eat cereal at least two times a day - for breakfast and before bed...occasionally after school too...OK, OK pretty much always after school, so, 3 times a day.


INGREDIENTS

  • 1 cup of oat flour
  • 1/4 cup of protein powder (Flavour of choice) *
  • 1/4 cup of almond meal
  • pinch of salt
  • 1 large egg white
  • 1/2 tsp vanilla
  • 1/4 cup of honey or agave
  • 1 tbsp of coconut oil (room temp or melted)
METHOD

Mix the dry ingredients in a bowl (oats to salt) then stir in the rest of the ingredients. Shape the dough into the desired shapes such as small balls or thin squares and lay on greaseproof paper and bake on  170'C for 10-12mins or until golden brown. Let them cool. Then pour over your favourite milks - I shake up some protein powder with my milk too for extra flavour ;P

*These are super adaptable! You can use chocolate protein powder, cinnamon flavours work really well, as well as peanut or even cookies and cream to imitate Hersheys cereal - you can mix and match making half the batch one flavour and another batch a second flavour and combine. Or if you don't have protein you can sub with cocoa powder.
