Girl scout cookie shake


The other day I was eating a full-fat-sugar-laden feast in a BBQ restaurant. Yes, I do eat naughty stuff too. Well, you know, I have to occasionally dabble in the unhealthy food zones as it's inspiration to make a healthy version *innocent face*... Plus sometimes food is just too damn good it would be a crime to die without ever trying it.  I am all about balance - eating healthy but allowing myself to indulge sometimes.  
FYI this was the best burger I have ever eaten from Red's True BBQ and SAUCES! So many sauces! Fact for you all, I love restaurants with sauces. I am a sauce fiend. I am the type of person who goes to Nandos and will bring every single sauce to the dinner table. That's why small tables are a no, no in Nandos as I can rarely fit all the sauces plus my food and a friends food on a table for two. And, let's be honest, faced in that predicament - the friend will have to move, no questions answered. 

Anyway with the-best-burger-I-have-ever-eaten-to-date dish I had a milkshake. Now, I have tried many a milkshake in my time thinking they were good but this, this was something else. A cinnamon doughnut and apple pie milkshake! CINNAMON DOUGHNUT AND APPLE PIE MILKSHAKE! 



Sorry about the all the shouting but it was honestly that good.

 It was a blend of Licktators ice cream (genius people for creating doughnut ice cream), apple pie, milk and malt.  Earlier that day me and my boyfriend bought a protein smoothie from a stall - I thought to myself if only a protein shake smoothie could taste as good as this! 

This shake is totally on par with the type of  thick ice creamy all-bad-stuff shakes you can get in a burger joint. Hints of silky caramel from the dates and the crisp nuttiness of the toasted coconut combined with bits of  rich chocolate. 


Ingredients
  •  75g of coconut dairy free ice cream (can sub with coconut yoghurt - if so add ice cubes)
  •  1 1/2 tbsp of smooth cashew butter
  • 1 cup of cartoned coconut milk 
  • 1 tsp of maple syrup/agave/honey
  • 1 scoop of vanilla protein powder
  • 3 soft dates 
  • 1 tbsp of toasted desiccated coconut 
  • 2-3 squares of dark chocolate
Method

Blend all the ingredients from ice cream to dates in a high powdered blender. Sometimes dates don't blend well and end up just as tiny chunks! To avoid this you can quickly soak them in a boiling water  for a couple minutes and drain before adding. Melt the dark chocolate in the microwave in a small bowl and using a spoon throw it around the inside of the glass creating swirls and drips. Try to put some around the top edges of the glass to stick the coconut too. Sprinkle the toasted coconut onto the chocolate bits at the top of the glass. If you can't find toasted coconut in the supermarket you can quickly fry some with a little coconut oil on medium heat till golden brown. Finally add the blended drink to the glass.
